Quinoa Salad

2/3 c uncooked quinoa rinsed

1 1/3 c water

Cook 10-15 minutes (let sit for 5 minutes, fluff with a fork

½ c raw sunflower seeds

½ t olive oil

Toast in oil let cool

 

Salad

1 head romaine lettuce

1 C shredded carrots

1 cup cabbage

½ cup dried cranberries

½ cup chopped cranberries

 

Cilantro dressing

1 3 cup olive oil

3 T lime juice (2 limes)

2 T rice vinegar

¼ cup fresh cilantro

2 t honey

2 medium cloves garlic

½ t salt

¼ chipotle chili powder
