Spunky Stir fried veggies #2

Stir fried veggies #2(eat yourself skinny)

2 T olive oil

3 garlic cloves minced

Stir fry for 1 minute in a pan at medium high temperature

Add

1 cup sliced carrots

1 lb asparagus (1 bunch) cut into 2 inch pieces

Stir fry for 5 minutes

Add

1 zucchini sliced

1 red bell pepper cut into strips

8 oz mushrooms

4 green onions cut into slivers

Stir fry with carrots and asparagus for another 8 minutes

Add seasonings:

1 t salt

½ t onion powder

¼ t paprika

¼ t pepper

¼ t crushed red pepper

Preheat oven to 450 degrees

 

1-2 medium sweet potatoes

1 head of cauliflower

1 crown of broccoli

1 medium onion

1 red pepper

1 yellow pepper

 

Cut all the above ingredients into bite sized pieces

 

In large bowl mix vegetables with

3-4 T of oil, 1-2 t old bay seasoning, 1 t salt

 

Spread on a piece of parchment paper

Bake for 20 minutes, rotate the pan and bake for another 10-20 minutes until lightly browned

Italian Stir Fried Vegetables #3

Preheat the over to 450 degrees

 

Cut the following into 1” bite sized pieces

1 broccoli crown

2 bell peppers

2 carrots

1 zucchini

1 onion

 

Mix with:

2 T Olive oil

1 t Italian seasonings

2 cloves garlic

½ t salt

¼ t pepper

 

Put mixture on parchment paper and cook for 15-20 minutes

 

Add 1 cup cherry tomatoes

1 T lemon juice

 

Cook for another 10 minutes

Plan ahead:  peel, ½ and freeze bananas in a baggie
