Preheat over to 400*
2 pt. cherry tomatoes
1 (15 oz) can white beans, drained and rinsed
1 shallot, quartered lengthwise
1 tsp dried oregano
¼ c halved Kalamata olives
¼ cup olive oil
Salt
Pepper
Chili flakes
4 oz Feta cheese, drained
combine, tomatoes, beans, shallot, oregano and olives with the ¼ cup of olive oil. Season with salt and pepper and chili flakes
Bake for 30 minutes and then stir until melted feta is mixed evenly with the other ingredients
Return to over and bake another 15 minutes
Make 4 wells into the oven mixture and crack an egg into each. Bake another 8-10 minutes. Season the eggs before baking with salt and pepper.
