Preheat oven to 400*
12 slices of ham or deli turkey
12 large eggs
½ tsp salt
½ tsp pepper
Use sliced ham or deli turkey that is thin enough to fold inside the muffin tins.
Grease the muffin tin with spray on organic canola oil
Push 1 slice of turkey or ham inside each muffin cup with room for an egg to be placed inside the middle
Crack an egg and put inside each
Cook for 12-15 minutes depending on how you like your eggs. You can add spinach, onions, bell pepper, potatoes, mushrooms… before you put the egg in the cup to give it a different flavor each time. I would stir fry the onions and bell pepper to make them tender first but it is your preference. Potatoes will definitely need to be tender before adding.
Garnish with green onions, parsley or avocado
Avocado Egg & Bacon Delight
2 large eggs
2 TBSP water
½ avocado (lightly mashed)
1 slice bacon or ham
In a medium nonstick pan, spray pan with cooking spray, place two mason jar lids (no center) into the pan. Crack eggs into the center of lids. Light stir with a fork to break the yolk. Sprinkle with pinch of salt and pepper Pour water around the lids and cover pan. Let eggs steam for about 4 minutes.
Put 1 TBSP of avocado on the plate, top with crumbled bacon or chopped ham.
Place egg on top and enjoy
