I highly recommend frittatas. They are just like quiches without the crust and are delicious. Here are several options but you can just pile any ingredients into a frittata that you enjoy.
Option 1:
1 small onion, chopped
1 clove garlic, minced
1 cup of mushrooms, chopped
1 red bell pepper
2 cups baby spinach, chopped
1/2 cup of milk
6-8 eggs (depending on size)
Salt (1/2 teaspoon)
Pepper (1/2 teaspoon)
2 TBSP olive oil
Over medium heat, stir fry the onion, garlic, mushroom and red bell pepper until soft (I like my mushrooms firmer so I put them in last), add the baby spinach and let wilt slightly.
Whisk the milk and eggs with salt and pepper until eggs are no longer separated
Add the vegetables to the eggs.
Option 2:
Preheat oven to 400*
½ lb. sweet potato (cut into ½” cubes and cook until tender in 1 TBSP oil or in oven)
¼ cup onion
2 cloves garlic (saute)
6-8 eggs
¼ cup milk
Can add ½ lb turkey sausage or not depending where you are in weight loss and maintenance. It is delicious either way.
Stir fry onion and garlic together until tender (5 minutes) over medium heat. Add spinach and wilt.
Mix eggs and milk until no longer separated
Put sweet potato chunks and vegetables into egg mixture and bake 30 minutes. Iron pan will reduce baking time to 20 minutes
