Total Tostadas

low carb tortillas (corn or flour)

2 TBSP olive oil

1 (15 oz) can of black beans

3 TBSP water

1 large or 2 medium avocado

1 TBSP lime juice

2 TBSP chopped fresh cilantro

6 large eggs

Salt

Pepper

 

Preheat the oven to 400*

Place low carb tortillas in a single layer. Brush with 1 TBSP of the oil.  Bake about 15 minutes until crispy and golden brown.

 

1 can of black beans, rinsed and drained.  Mash the beans but leave slightly chunky. Stir in 3 TBSP water.

 

1 large avocado or 2 medium.  Mash until smooth with slight chunks.  Add 1 TBSP lime juice, 2 TBSP fresh chopped cilantro, pinch of salt and pepper.

 

Dice small onion.

 

Fry 6 large eggs in 1 TBSP of oil until the yolk is set the way you enjoy your eggs.  Salt and pepper the eggs.

 

Layer the tortilla with the beans, avocado, eggs and top with onion, salsa and jalapeño as you desire
