Sweet potato Sweetness

Preheat oven to 425.

3 large sweet potatoes, peeled and chopped

2 bell peppers chopped (I use red for the sweetness but green are good too)

1 large onion chopped

  • cloves garlic
  • TBSP olive oil

1/4 tsp paprika

3 sprigs rosemary, minced (take out stem before mincing)

Combine all ingredients in a bowl.  Line a baking sheet with edges with parchment paper.  Put ingredients on the baking sheet and back for 45 minutes shaking or turning over ingredients after 30 minutes.  Sweet potatoes should be crispy on the outside.
