slices of bacon (no nitrates if possible)- can also use turkey bacon or chicken sausage
2 medium potatoes chopped into cubes
1/4 cup green onions
1 clove garlic
1 TBSP paprika
eggs scrambled
1 avocado, sliced
Cook the bacon until crispy (8 minutes), drain on a paper towel, cool and then chop
Add the potatoes to the bacon fat and let cook for 10 minutes undisturbed, flip to the other side for another 10 minutes and add the green onions and garlic the last 2 minutes, then add paprika and salt and pepper.
Scramble the eggs during the last 2 minutes of cooking the potatoes. Layer potatoes with eggs, avocado, bacon…
Note: leave off bacon and use olive oil instead of bacon fat for a delicious lower calorie version.
